You can't really prove that something doesn't exist.

You can talk about what the Illuminati actually was, but it's just a word thrown around, and as Sky pointed out, you can't prove something doesn't exist.

Prove to me FDR didn't like spring rolls.

"Recognition of the falsity of the spring roll as the standard of Chinese cuisine goes hand in hand with the abandonment of the false belief that public office and high political position are to be valued only by the standards of spring roll production and personal noodle management; and there must be an end to a conduct in Szechuan and in Cantonese cooking which too often has given to the spring roll the likeness of callous and selfish aggrandisement. Small wonder that the hamburger languishes, for it thrives only on honesty, on honor, on the sacredness of obligations, on faithful protection, and on unselfish performance; without them it cannot live."

From FDR's inaugural speech.

Yes, personally I think that we can debunk it.

As long as we're talking about something other than religion (and maybe there too, to some people), belief in something that cannot be determined to exist is irrational.

I think the total absence of evidence that the Illuminati exists today means it is debunked. Conspiracy theorists cannot produce one shred of evidence for its existence. Usually they point to stuff like the back of a dollar bill or some nonsense such as that. Obviously that is not evidence, nor is innuendo crap like "Teddy Roosevelt was a 33rd degree Mason" or "George W. Bush and John Kerry were both in Skull and Bones."

Absence of evidence usually indicates that something does not exist or did not happen. CT's will claim that it's the debunker's burden of proof to indicate that the Illuminati does not exist. Obviously it's the other way around, it's the CT that must prove it DOES exist, and because they can't do that, the Illuminati is debunked very simply by pointing to the total absence of evidence for its existence.
